Egg Bites

Notes:

  • Makes 12 egg bites.
  • This recipe is very versatile so you can customize them with anything you have in your fridge.
  • They can be kept in the fridge for up to 4 days. Just pop them in the microwave!

Ingredients:

  • 10 eggs
  • 2 chopped green onions
  • bacon bits (or any  meat you desire)
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheese

Directions:

  1. Preheat your oven to 400 degrees F and line a muffin tin with cupcake liners.
  2. Whisk all the eggs together along with the salt and pepper.
  3. Put the chopped green onion, shredded cheese, and bacon bits into the bottom of the muffin tins.
  4. Fill the muffin cups almost to the top with the egg mixture and put them in the oven for 12 – 15 minutes or until set. Allow to cool for a bit before serving, and dig in!
