Why you should LOVE this recipe:
- From my experience, these pickled onions are the best topping on literally ANYTHING!!! (I’ve put them on a fried egg once and it was quite enjoyable).
- They are sour, but there’s also a tinge of sweetness which makes it quite addicting. (so watch out…)
- They’re pretty 🙂
Ingredients:
- 1 and 1/2 tablespoons sugar
- 1 tablespoon salt
- 2 cups thinly sliced red onion
- 2/3 cup rice wine vinegar
Directions:
- Combine the vinegar, sugar and salt. Stir until the sugar and salt dissolve.
- Add the red onion and transfer to a container with a lid and store it in the fridge. (it takes around an hour or two to get all mushy and a deep pink colour).
- Keep in the refrigerator for up to 2 weeks.
- Put on anything you’d like. (they also taste really good in my Poke bowl recipe).
- Enjoy!
