Pickled Onions

Why you should LOVE this recipe:

  • From my experience, these pickled onions are the best topping on literally ANYTHING!!! (I’ve put them on a fried egg once and it was quite enjoyable).
  • They are sour, but there’s also a tinge of sweetness which makes it quite addicting. (so watch out…)
  • They’re pretty 🙂

Ingredients:

  • 1 and 1/2 tablespoons sugar
  • 1 tablespoon salt
  • 2 cups thinly sliced red onion
  • 2/3 cup rice wine vinegar

Directions:

  1. Combine the vinegar, sugar and salt. Stir until the sugar and salt dissolve.
  2. Add the red onion and transfer to a container with a lid and store it in the fridge. (it takes around an hour or two to get all mushy and a deep pink colour).
  3. Keep in the refrigerator for up to 2 weeks.
  4. Put on anything you’d like. (they also taste really good in my Poke bowl recipe).
  5. Enjoy!
